veggie burgers!

Here's the recipe of my friend Suzie's veggie burgers. It's super-easy, very quick and most importantly so so so so tasty. She cooked them for me and Claudia last Friday and they were amazing, the perfect refuel after circuits in the gym!

So, given the heavy sport commitment of the week-it's Stan Calvert week, the big varsity match-especially on Claudia's side (I am only doing the 5k xcountry), I decided to make them for dinner last night.

And to share the recipe wit y'all :)

Ingredients
For the burgers (makes 6):
-2 tins of beans-any kind you want/love/fancy/have in your cupboard: I used kidney beans
-handful of coriander or parsley
-a couple of spoonfuls of hot sauce
-handful of spinach leaves
-a cup of breadcrumbs
-1 crushed garlic clove
-anything else you may fancy in a burger patty: onion, peppers, carrots...be creative!

-Drain the beans and place them in a bowl.
-Add all the other ingredients
-Mix all together with a hand mixer

It does look a bit mushy and not particularly appealing at this stage, but it gets better! If it's too liquid add 1/2 tablespoon of flour or breadcrumbs.

Lay dollops of the mixture on a baking tray lined with baking paper or tin foil and cook in the oven at 180C until they start to solidify and look like burger patties (around 30 minutes).

Serve on whole wheat buns with some salads and other trimmings of choice:  I made some parsnips chips. Peel and thinly slice parsnips lengthwise, toss them in some oil, salt and pepper and roast in the oven at 200C for 40 minutes, stirring halfway through.
